What are mini conchas?
A concha is Mexico's most recognizable pan dulce: a soft, lightly sweet roll topped with a crunchy sugar shell scored to look like a seashell. Mini conchas are the same bread in a party-friendly size — one or two bites, the same vanilla, chocolate, or pink topping, and a lot easier to share around a table or an office tray.
They are not a different recipe. We use the same dough and the same shell paste as our full-size conchas, shaped smaller so a bag goes further at birthday parties, quinceañeras, school events, and Sunday coffee. Kids love them; adults quietly empty the bag first.
At Tlaxcala Bakery we bake mini conchas in-house every morning at both our Santa Ana and Anaheim locations. No preservatives, nothing frozen, and when the bag is gone for the day, it is gone until tomorrow's bake.

What flavors of mini conchas do you bake?
The classic shell toppings: vanilla (white or yellow sugar paste), chocolate, and pink. Exact colors on the tray can vary day to day, but those three are the core lineup.
How are mini conchas sold?
By the bag or box — they are meant for sharing. Ask at the counter for the sizes available that day.
Do I need to order mini conchas ahead of time?
Not for a normal bag. For large party quantities, call the Santa Ana or Anaheim bakery a day ahead so we can bake enough.
Are mini conchas the same as full-size conchas?

When are mini conchas freshest?
First thing in the morning. Anaheim opens at 5:00 AM and Santa Ana at 6:00 AM, seven days a week.
