Our Story

For nearly 30 years, our family has been dedicated to preserving the authentic flavors and traditions of Mexican baking, sharing our love for fresh, handcrafted pastries with our community.

It All Started with Jesus Sedeno

In 1994, Jesus Sedeno opened Tlaxcala Bakery at 1208 S Standard Ave in Santa Ana, California, but his journey began much earlier. Charismatic, young and a suave talker, Jesus started by working at a bakery making bread and selling out the back of a minivan. He would go to the big name supermarkets and sell them bread to sell to their customers, while people could also get it straight from the back of the minivan.

What made Jesus's baking special wasn't just the authentic recipesβ€”it was his unwavering commitment to using only the best ingredients and refusing to take shortcuts or cut costs. The goal has always been to make high quality pan dulce with no preservatives and fresh ingredients. He would wake up before dawn each morning, carefully preparing the dough, mixing the perfect tres leches blend, and ensuring that every concha had just the right amount of sugar shell topping.

Jesus was noticed by the Nuno Bros who had a plaza in Los Angeles. They mentioned to him they were opening up a shopping center in Santa Ana and they loved his bread so much that they asked him if he would like to open up shop with them. Jesus did not hesitate and opened up Tlaxcala Bakery in 1994 with his wife Columba. During those early days, their son Jesse would sleep in one of those plastic crates the milk would come in, with a blanket and a pillow, while his parents worked tirelessly to build their dream. The small minivan operation grew into something much bigger than he had ever imagined.

Part of the Community

Being part of this community means more to us than just running a business. We've had the privilege of being part of countless celebrations, from quinceaΓ±eras to weddings, from birthday parties to holiday gatherings.

We've watched families grow up, celebrated with them during happy times, and provided comfort through our familiar flavors during difficult moments. Our tres leches cake has been the centerpiece at graduation parties, our churros have warmed hearts on cold winter days, and our pan dulce has brought families together around breakfast tables for decades.

In 2019, we opened our second location in Anaheim, California, where we specialize in tamales and tortas. The tradition continues with our two sons John and Jesse Sedeno and their families, who have learned the craft and continue with the same traditions passed down from their father. We also believe in giving back. We regularly donate to local schools, support community events, and provide internships to young people interested in learning the art of traditional baking. This community has given us so much, and we're honored to give back in whatever way we can. Our main location at 1208 S Standard Ave in Santa Ana continues to be the heart of our operation.
